Whole30 Week 4

Day 22 - January 25, 2016

The homestretch (kind-of, since we'll be going a bit past 30 days)!  Day 22 of Round 1!  

M1:  2 over-medium fried eggs, sweet potato & sausage hash, topped with salsa verde guacamole. 

M2:  leftover BBQ ribs, paleo potato salad & balsamic sautéed squash. 

M3:  leftover balsamic sautéed squash, cauliflower mash, leftover orange-pineapple chicken in a spaghetti squash boat, and a sparkling water with blackberries!  

Day 23 - January 26, 2016


Wow!  Just Wow!  Definitely feeling that "downhill slope"!  Day 23 of our first round!  

We did NOT do any shopping this last weekend, and are literally cleaning out the fridge before our next grocery trip!  Thankfully, we've overbought the last 3 weeks!  😜

Breakfast:  pumpkin sautéed in ghee, and 2 fried eggs.  

Lunch:  tuna salad, with celery, carrots, tomatoes, & avocado, over a bed of romaine! 

Dinner:  leftover roast (with a few potatoes & carrots, some leftover potato salad & a bit of BBQ sauce (recipe from happy wifestyle)!  

I think I've slacked on my water a bit, as my lips are all dry & cracked!  Kicking myself back into gear on that one!

Round 1, Day 25! 

Breakfast:  pumpkin & sausage scramble with scrambled eggs & avocado verde guacamole.  

Lunch:  leftover spaghetti squash & orange chicken with avocado slices.  

Dinner:  grilled steak, roasted potato slices & green beans and tomatoes. 

Day 26 - January 29, 2016


Round 1, Day 26:  I have to say, today was the hardest yet.  We didn't grocery shop this week, so finishing up what we had in the house, and it's getting a little sparse.  Also, at least 3/4 of us appear to be getting sick (including me).  I want comfort food SOOOOOOO badly!  Determined to stick out the last 4 days though!

Breakfast:  pumpkin, sausage, egg scramble, topped with avocado. 

Lunch:  turkey burger patty, on lettuce, a Roma tomato & carrot and celery sticks.  (Lunch was on the run, because my kids had a dentist appointment after school). 

Dinner:  roasted spaghetti squash, with "spaghetti meat sauce" and prosciutto on top!  Thanks, Papa Bear, for the comfort food!!!

Day 27 - January 30, 2016


Day 28 - January 31, 2016


Round 1, Day 28!!!!  Wow!  Is it really almost finished?!?!  I am strangely excited for reintroduction - we'll be doing the "slow-roll" that Melissa mentioned in her periscope broadcast yesterday!  Pretty sure we'll mostly stay gluten-free, with very little dairy & added sugars.  

Breakfast:  egg, sausage scramble, topped with red pepper sauce, and spinach sautéed in ghee!  

Lunch:  tuna salad, over romaine, with guac, tomatoes, & cucumbers.  

Dinner:  BBQ'd steak, topped with chimichurri, and cauliflower mash.
