Whole30 Week 3

This week began with a celebration!  Hump day!!!  We are officially half-way  through our journey on the Whole30!   Day 15 - January 18, 2016 HALF-WAY MARK!!!   Breakfast :  Roasted Sweet Potatoes & 2 scrambled Eggs.   Lunch :  Protein Salad over Romaine, with Latin Vinaigrette, and leftover pumpkin soup.   Dinner :  Walnut-crusted Pork tenderloin, and Brussels Sprouts, Onions & Butternut Squash, with a little avocado on the side!   Wow!  What a ride, so far!  Am I right?!?!  I'm very excited to see what the future 15 days is like!   Day 16 - January 19, 2016 Officially past the half-way mark!   Breakfast :  Butternut Squash/Sausage skillet, with a green salad & ranch, and 3 pieces of cutie orange, that my kids left sitting around.   Lunch :  Leftover Walnut Crusted pork tenderloin, on a salad with romaine lettuce, avocado, tomatoes ...

Our Family is Filling Buckets!

Our family is filling buckets!  Yep, filling buckets!  Little Miss Muffet was taught about filling/emptying buckets (of kindness & self-esteem) last year during her first year of Preschool!  We've hung onto the tenets of that teaching, and decided to take it to a tangible level for Little Jack Horner!   There are a couple of books on the topic, but my kids seem to relate to this one!  "How Full is your Bucket for kids," by Tom Rath & Mary Reckmeyer.  If you've never heard of this idea before, the basic idea is that we all have a bucket & it can be filled or emptied by our circumstances & the way we treat others.  My children are typical siblings - they bicker, they fight & they forgive.  We want to work to decrease the bickering and fighting!  So, we are implementing the "Bucket filling" idea into our every day lives!   Little Miss Muffet, and I made a visual reminder of how we can fill ea...

Whole30 Week 2

What an amazing journey so far!  We have definitely had some tough days, but the reward has far outweighed the difficulties!  Read along for the nuts & bolts of our second week of participating in the Whole30 program! And with that,  on with the journey!  Day 8 - January 11, 2016 I know I don't have abs yet, but I did get complimented TWICE today, that people can tell I've already lost weight! Breakfast :  2 Scotch Eggs, berries & homemade "pickles" (cucumbers in white vinegar with salt & pepper).  Lunch :  Thai Cucumber Cups (from the Whole30 book), deconstructed - since I made "pickles" and forgot to keep some cucumbers! I did have 1/2 banana with my kids, to keep them from wasting what they didn't want....  Dinner :  Pulled Pork Carnitas salad, with peppers, carrots, zucchini, tomatoes & ranch dressing (my Latin dressing got too cold in the fridge & was solid)! Whole30 Week 1

In another blog post, I mentioned that Papa Bear & I ordered pizza for the last time in 35+ days on New Years Eve.  This is because we are doing the Whole30 Program.  Essentially, no sugars (or sweet substitutes), alcohol, dairy, grains or legumes.  Pretty tough regimen, but we know that it's for a metabolic reset & will help us conquer our demons.  Mama Bear's "Before" Pictures Papa Bear's "Before" Pictures Day 1 - January 4, 2016 We took our initial measurements, and weighed for the final time for the next 31 days (weighing or measuring during the program is against the rules)!  I won't share any numbers right now,  but I will at the end of our journey!  Day 1's meals consisted of the following:   Breakfast :  3 egg/veggie "muffins", 2 tablespoons of  "Salsa" (I don't have a food processor, so I ran it through the blender), and 1/2 banana. We Aren't Stating Resolutions This Year!

Yes, I talk about 2016 being better than 2015, and with good reason, but we decided, as a family to NOT set resolutions.  Instead, we are just planning on life being better! That being said, I am a planner, and a little bit OCD too, so it's a really different view, to not set resolutions!   Anyway, let's just set that aside for now!   New Years Eve was spent with a couple of extra kiddos in our home for a sleepover, while their parents got a much needed date night!  We bought our last Pizza for the next 35+ days (more on that later), and brownies - and played & had fun, until it was bedtime.   New Years Day was sunny & fabulous, until that evening, when I started to feel a pain in my chest... It was that kind of pain that only hurts when you breathe, and then when you do breathe, you don't want to.  I noticed a tightness in my next & pain down the back of my left arm, and a little tingling in my fingers.  I start...

Meet the Crazy K Family!  The Crazy K Family -- Fall 2015 My hubby & I didn't meet until we were already in our 30's.  We both desperately wanted family, though I had been told, by many physicians, that I would not be able to have children.  So, we ventured into our new life together, and set out to enjoy things!  Surprise!  The week of our FIRST Wedding Anniversary, I got pregnant!  We didn't KNOW I was pregnant until 2 DAYS after our first MAJOR move together!  Yep, I was moving heavy furniture & boxes, only to find out 2 days later, that Little Miss Muffet was on her way!   Little Miss Muffet -- Age: 4 1/2 Fast forward a little farther!  The week of our THIRD Wedding Anniversary, I got pregnant again!  This was extremely different - as I thought I had the flu -- for a MONTH, until we figured out it was because Little Jack Horner was on his way!   Little Jack Horner -- Age: 2 1/2 Daddy ...
